Ingredients

– 400 g smoked sausage, sliced
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 1 can (400 g) red kidney beans, drained and rinsed
– 2 cups chicken broth
– 1 cup rice
– 1 teaspoon paprika
– 1 teaspoon dried thyme
– Salt and black pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add sliced sausage, chopped onion, and minced garlic. Cook until the onion is soft.
3. Stir in the kidney beans, chicken broth, rice, paprika, and thyme.
4. Bring the mixture to a boil. Reduce heat and cover the pot. Simmer until rice is tender.
5. Season with salt and pepper before serving.
