Ingredients
– 1 cup of rice
– 2 cups of water
– 1 medium onion, chopped
– 2 medium tomatoes, chopped
– 1 medium brinjal (eggplant), chopped
– 1 teaspoon mustard seeds
– 1 teaspoon turmeric powder
– 2 teaspoons curry powder
– Salt to taste
– Fresh coriander, for garnish
Method
1. Begin by rinsing the rice under cold water until the water runs clear.
2. Heat the pressure cooker and add mustard seeds; let them sizzle for a few seconds.
3. Add chopped onions into the pot and sauté until they turn golden brown.
4. Next, mix in the tomatoes, brinjal, turmeric, curry powder, salt, and sauté for about 2-3 minutes.
5. Pour in the rinsed rice and water, then close the lid. Cook on high pressure for about 6 minutes. Once done, release the pressure carefully and fluff the rice with a fork.
