Vegetable Soup Recipe
Ingredients
– 2 cups diced vegetables (like carrots, celery, and potatoes)
– 1 cup chopped onion
– 2 cloves garlic, minced
– 1 can (400 g) diced tomatoes
– 4 cups vegetable broth
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– 1 cup frozen corn
– 1 cup green beans, chopped
Method
1. Begin by turning on the Instant Pot and selecting the ‘Sauté’ setting. Add the chopped onion and garlic, cooking until they are soft.
2. Add the diced vegetables, corn, and green beans. Stir everything together.
3. Pour in the diced tomatoes and vegetable broth. Sprinkle the oregano, basil, salt, and pepper on top.
4. Close the lid of the Instant Pot and set it to cook on high pressure for 10 minutes.
5. Once the cooking is done, let the pressure release naturally for about 5 minutes. Carefully open the lid and enjoy your soup.
