Ingredients
– 1 kg chicken breast, diced
– 1 cup onion, chopped
– 2 cloves garlic, minced
– 1 cup long-grain rice
– 2 cups chicken broth
– 1 cup frozen peas
– 1 teaspoon salt
– ½ teaspoon black pepper
– 1 teaspoon dried thyme
– 2 tablespoons olive oil
Method
1. Set the Instant Pot to sauté mode. Heat olive oil and add chopped onion. Cook for about 2-3 minutes until soft.
2. Add minced garlic. Stir for about 30 seconds, making sure it doesn’t burn.
3. Place diced chicken into the pot. Cook for 5 minutes, stirring occasionally until it starts to brown.
4. Sprinkle salt, pepper, and thyme over the chicken. Pour in the rice and chicken broth. Mix everything well.
5. Close the lid securely. Select pressure cook on high for 10 minutes. After cooking, let steam release naturally for 5 minutes. Finally, add frozen peas and stir before serving.
