Giardiniera Recipe
Ingredients
1 cup cauliflower florets
1 cup diced carrots
1 cup sliced bell peppers
1 cup diced celery
1 cup small green olives, pitted
250 ml red wine vinegar
250 ml water
1 teaspoon dried oregano
1 teaspoon red pepper flakes
1 teaspoon salt
Method
1. Start by washing the vegetables thoroughly. Chop the cauliflower, carrots, bell peppers, and celery into bite-sized pieces.
2. Combine the chopped vegetables and olives in a large mixing bowl.
3. In a separate bowl, whisk together the red wine vinegar, water, oregano, red pepper flakes, and salt.
4. Pour the vinegar mixture over the vegetables. Make sure they are well coated.
5. Transfer the mixture to a jar and refrigerate for at least 24 hours before serving to let the flavors develop.
