Ingredients
– 6 large eggs
– 100 ml mayonnaise
– 1 tsp Dijon mustard
– 1 tbsp lemon juice
– Salt to taste
– Pepper to taste
– 2 tbsp chopped fresh chives
– 1 tbsp chopped parsley
– 4 slices of bread (for serving)
– Lettuce leaves (for serving)
Method
1. Put the eggs in a pot and cover them with cold water. Bring the water to a boil over high heat.
2. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for about 10-12 minutes.
3. After the time is up, carefully drain the hot water and transfer the eggs to an ice bath to cool for 5 minutes.
4. Peel the cooled eggs and chop them into small pieces. In a bowl, combine the eggs with mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
5. Stir in the chopped chives and parsley. Serve the egg mixture on bread with lettuce leaves.
