Ingredients
– 2 cups cashews
– 1 tablespoon coconut oil
– 1 teaspoon vanilla extract
– 1 teaspoon salt
– 1 tablespoon honey or maple syrup
Method
1. Preheat your oven to 180°C. Spread the cashews on a baking tray and roast them for about 10-12 minutes, stirring halfway, until they are golden brown.
2. Allow the roasted cashews to cool for a few minutes after taking them out of the oven.
3. Place the cashews in a food processor along with the coconut oil, vanilla extract, salt, and honey.
4. Process the mixture for about 5-10 minutes, stopping occasionally to scrape down the sides, until it reaches a smooth and creamy consistency.
5. Transfer the cashew butter into a jar or container and store it in the fridge.
