Ingredients
– 4 medium-sized beets
– 2 tbsp olive oil
– 1 tsp salt
– 1 tsp pepper
– 1 tbsp balsamic vinegar
– 1 tsp honey (optional)
– Fresh herbs (like thyme or rosemary, optional)
– Foil (for wrapping)
Method
1. Preheat your oven to 200°C.
2. Wash the beets thoroughly under running water to remove dirt.
3. Trim the tops and tails of each beet while leaving the skin on.
4. Rub the beets with olive oil, then sprinkle with salt and pepper. Wrap them in foil.
5. Roast in the oven for about 45 to 60 minutes, until they are tender. Check by piercing with a fork.
