Ingredients
– 500 g chorizo sausage
– 1 cup onion, chopped
– 1 cup red pepper, chopped
– 2 cloves garlic, minced
– 400 g canned diced tomatoes
– 2 tbsp tomato paste
– 1 tsp smoked paprika
– 1 tsp cumin
– 4 hamburger buns
– 2 cups lettuce, shredded
Method
1. Heat a large pan over medium heat. Add the chorizo, breaking it apart while it cooks until browned.
2. Stir in the chopped onion and red pepper. Cook for about 5 minutes until the vegetables soften.
3. Add the minced garlic, diced tomatoes, tomato paste, smoked paprika, and cumin to the pan. Mix everything well.
4. Let the mixture simmer for 10 minutes so the flavors blend together.
5. Toast the hamburger buns lightly. Serve the chorizo mixture inside the buns topped with shredded lettuce.
