Ingredients
– 1 whole chicken (about 1.5 kg)
– 2 cups basmati rice
– 1 large onion, chopped
– 4 cloves garlic, minced
– 1 tablespoon ginger paste
– 2 teaspoons cumin powder
– 2 teaspoons coriander powder
– 1 teaspoon turmeric powder
– 4 cups water
– Salt to taste
Method
1. Start by washing the rice under cold water until the water runs clear. Soak it in water for 30 minutes and then drain.
2. Heat oil in a large pot. Add chopped onion and sauté until golden brown. Stir in minced garlic and ginger paste, cooking for 1 minute.
3. Add the whole chicken to the pot. Sprinkle cumin, coriander, turmeric, and salt over the chicken. Cook for a few minutes until the chicken is browned on all sides.
4. Pour in the 4 cups of water. Bring it to a boil, then let it simmer for about 30 minutes until the chicken is fully cooked.
5. Remove the chicken and set aside. Add the soaked rice to the pot. Place the chicken back on top of the rice. Cover and cook on low heat for about 20 minutes, or until the rice is tender.
