Ingredients
– 4 chicken breasts
– 1 cup plain flour
– 2 eggs
– 2 cups panko breadcrumbs
– 1 tsp garlic powder
– 1 tsp salt
– 1 tsp black pepper
– 250 ml vegetable oil
– 2 cups shredded cabbage
– 1/4 cup tonkatsu sauce
Method
1. Start by preparing the chicken. Flatten each chicken breast to an even thickness using a rolling pin or meat mallet.
2. Set up three bowls. Place flour in the first bowl. Whisk eggs in the second bowl. Combine panko breadcrumbs, garlic powder, salt, and pepper in the third bowl.
3. Coat each chicken breast in flour, dip into the egg mixture, then cover with the breadcrumb mixture. Press well to ensure breadcrumbs stick.
4. Heat vegetable oil in a large frying pan over medium-high heat. Add chicken pieces and cook for about 4 minutes on each side, or until golden brown.
5. Once cooked, transfer chicken to a paper towel-lined plate to remove excess oil. Serve with shredded cabbage and drizzled tonkatsu sauce.
