Easy Chicken Enchilada Soup Recipe: Quick & Flavorful Delight

Ingredients

– 500 g chicken breast, diced
– 1 onion, chopped
– 2 cloves garlic, minced
– 400 g canned diced tomatoes
– 400 ml chicken broth
– 1 can black beans, drained and rinsed
– 1 cup corn, canned or frozen
– 2 teaspoons chili powder
– 1 teaspoon cumin
– Salt and pepper to taste

Method

1. In a large pot, cook the diced chicken over medium heat until it’s no longer pink.
2. Add the chopped onion and minced garlic. Stir and cook until the onion is soft.
3. Pour in the canned tomatoes, chicken broth, black beans, and corn.
4. Season with chili powder, cumin, salt, and pepper. Stir everything together well.
5. Bring the soup to a boil, then reduce heat and let it simmer for about 20 minutes.
