Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 400 g canned diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Method
- Heat olive oil in a large pan over medium heat.
- Cook chicken breasts until golden brown, about 5-7 minutes on each side.
- Add onion, garlic, and bell pepper. Stir and cook for another 5 minutes.
- Pour in diced tomatoes, oregano, basil, and season with salt. Stir well.
- Simmer for 20 minutes until the chicken is cooked through. Garnish with parsley before serving.
