Ingredients
– 600 g chicken breasts, cut into pieces
– 2 tablespoons butter
– 1 onion, chopped
– 3 cloves garlic, minced
– 1 tablespoon ginger, minced
– 1 tablespoon curry powder
– 400 ml canned crushed tomatoes
– 200 ml coconut milk
– Salt, to taste
– Fresh cilantro, for garnish
Method
1. Heat butter in a large pan over medium heat.
2. Add the chopped onion and sauté until it becomes soft.
3. Stir in minced garlic and ginger, cooking for about a minute.
4. Mix in the curry powder, followed by the chicken pieces. Cook until the chicken is browned.
5. Pour in crushed tomatoes and coconut milk, adding salt to taste. Simmer for 20 minutes and garnish with fresh cilantro.
