Ingredients
– 1 ½ cups all-purpose flour
– 1 cup brown sugar
– 1 teaspoon baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 teaspoon ground cinnamon
– ½ cup milk
– 1 large egg
– ¼ cup vegetable oil
– 1 cup diced apple
Method
1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
2. In a large bowl, combine the flour, brown sugar, baking powder, baking soda, salt, and cinnamon. Mix well.
3. In another bowl, whisk together the milk, egg, and vegetable oil until smooth.
4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Fold in the diced apple.
5. Spoon the batter into the muffin tin and bake for 20 to 25 minutes, or until a toothpick comes out clean.
