Easiest Homemade Romesco Sauce
Ingredients
1 red capsicum (bell pepper)
60 ml red wine vinegar
1 clove garlic, minced
50 g roasted almonds
1 tsp smoked paprika
1 tsp salt
1/4 tsp black pepper
60 ml olive oil
1 tsp lemon juice
1 tbsp fresh parsley, chopped
Method
1. Roast the red capsicum over an open flame, turning until the skin is blackened. Remove from heat and place in a bowl, covering it with a plate for 10 minutes.
2. Afterward, peel off the charred skin and remove the seeds. Chop the pepper roughly.
3. Combine the roasted capsicum, red wine vinegar, minced garlic, roasted almonds, smoked paprika, salt, and black pepper in a food processor.
4. Pulse the mixture until everything is well blended. With the motor running, slowly add olive oil until the sauce becomes smooth.
5. Finally, stir in lemon juice and chopped fresh parsley. Taste and adjust seasoning if needed.
