Ingredients
500 g chicken breast, diced
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
400 g canned diced tomatoes
1 tsp dried basil
1 tsp dried oregano
1 cup chicken broth
Salt and pepper to taste
Method
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic. Cook until the onion is soft.
Stir in the diced chicken and cook until browned.
Mix in the bell pepper, canned tomatoes, dried basil, and oregano.
Pour in the chicken broth and season with salt and pepper. Simmer for 20 minutes.
