Ingredients
– 1 cup rice
– 5 cups water
– 1 cup sugar
– 1 teaspoon cinnamon
– 1 pinch salt
– 1½ cups milk
– 1 tablespoon cornstarch
– 2 tablespoons lemon juice
– 1 teaspoon vanilla extract
– Chopped nuts for topping
Method
1. Rinse the rice under cold water until the water runs clear. Soak it in water for about 3-4 hours.
2. After soaking, drain the rice and blend it with 5 cups of water until smooth.
3. Pour the rice mixture into a pot. Cook over medium heat, stirring frequently until it thickens. This may take about 10-15 minutes.
4. Stir in sugar, milk, cinnamon, salt, cornstarch, lemon juice, and vanilla extract. Continue cooking for another 5 minutes until well combined and slightly thickened.
5. Let the mixture cool, then refrigerate it for at least 2 hours before serving. Top with chopped nuts before enjoying.
