Ingredients
• 1 cup of rice
• 2 cups of water

• 1 onion, chopped

• 1 cup of frozen mixed vegetables
• 1 cup of shredded cheese
Method
1. Start by rinsing the rice under cold water in a strainer.
2. In a pot, combine the rinsed rice and water. Bring it to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
3. While the rice cooks, heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, stirring until softened.
4. Stir in diced tomatoes, oregano, and salt. Cook for about 5 minutes until heated through.
5. Mix in frozen vegetables and cooked rice, then sprinkle shredded cheese on top. Heat until cheese melts.
