Ingredients
– 500 g chicken breast, diced
– 2 cups mixed vegetables (e.g., carrots, peas, corn)
– 1 cup chicken broth
– 1 cup rice
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 2 tablespoons soy sauce
Method
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
2. Stir in the diced chicken and cook until browned on all sides. This usually takes around 5-7 minutes.
3. Add the mixed vegetables, rice, chicken broth, dried thyme, soy sauce, salt, and pepper. Mix everything well.
4. Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
5. Fluff the rice with a fork before serving. Enjoy your meal!
