Ingredients
– 1 cup rice
– 2 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 bell pepper, diced
– 1 can (400g) diced tomatoes
– 1 teaspoon dried oregano
– Salt and pepper to taste
Method
1. Start by rinsing the rice under cold water until it runs clear.
2. In a saucepan, bring the water to a boil. Add the rice and a pinch of salt. Cover and reduce heat to low. Let it simmer for about 15 minutes or until all the water is absorbed.
3. While the rice cooks, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
4. Stir in the minced garlic, diced carrot, and bell pepper. Cook for about 5 minutes until the veggies are tender.
5. Add the diced tomatoes and dried oregano. Simmer for another 5 minutes. Mix in the cooked rice and season with salt and pepper.
