Ingredients
– 250 g of biscuits (such as plain or digestive)
– 125 g of unsalted butter
– 1 cup of cream cheese
– 1 cup of icing sugar
– 1 cup of thickened cream
– 2 teaspoons of vanilla extract
– 1 cup of mixed berries (fresh or frozen)
– 2 tablespoons of lemon juice
– Extra berries for topping
– Mint leaves for garnish
Method
1. Crush the biscuits into fine crumbs using a food processor or by placing them in a ziplock bag and smashing them with a rolling pin.
2. Melt the butter in a small saucepan and mix it with the crushed biscuits. Press this mixture into the bottom of a 20 cm round springform pan to form a base.
3. In a bowl, beat the cream cheese and icing sugar with an electric mixer until smooth and creamy.
4. In another bowl, whip the thickened cream and vanilla extract until soft peaks form. Carefully fold this whipped cream into the cream cheese mixture.
5. Spread the cream cheese mixture over the biscuit base. Top with mixed berries and drizzle lemon juice over them. Chill for a few hours before serving with extra berries and mint leaves for decoration.
