Ingredients
– 1 cup of cooked lentils
– 1 cup of cooked quinoa
– 1 large carrot, diced
– 1 bell pepper, chopped
– 1 small cucumber, diced
– 1 can of chickpeas, rinsed and drained
– 1/4 cup of olive oil
– 2 tablespoons of lemon juice
– Salt, to taste
– Pepper, to taste
Method
1. Start by cooking the lentils and quinoa according to the package instructions.
2. While they cook, prepare the vegetables by dicing the carrot and cucumber, and chopping the bell pepper.
3. Once the lentils and quinoa are ready, allow them to cool for a few minutes.
4. In a large mixing bowl, combine the cooked lentils, quinoa, chickpeas, and all the chopped vegetables.
5. Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper, then toss everything together until well combined.
