Ingredients
– 2 cups rice
– 4 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 2 cups mixed vegetables (frozen or fresh)
– 1 can (400g) diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1 teaspoon pepper
Method
1. Rinse the rice in a strainer under cold water.
2. In a large pot, heat olive oil over medium heat.
3. Add onion and garlic, cooking until the onion becomes soft.
4. Stir in the mixed vegetables, diced tomatoes, oregano, salt, and pepper.
5. Pour in the water and bring to a boil. Add rice, cover, and reduce heat to low. Cook for 18 minutes or until rice is tender.
