Ingredients
– 1 cup of rice
– 2 cups of water
– 1 tablespoon of oil
– 1 onion, diced
– 2 garlic cloves, minced
– 1 bell pepper, chopped
– 1 can of black beans, drained and rinsed
– 1 cup of corn, frozen or canned
– 1 teaspoon of cumin
– Salt and pepper to taste
Method
1. Begin by rinsing the rice under cold water until it runs clear.
2. In a pot, bring 2 cups of water to a boil, then add the rice.
3. Reduce the heat to low and cover the pot. Cook for 18-20 minutes until water is absorbed.
4. Meanwhile, heat oil in a pan over medium heat. Add the onion and garlic, sauté until soft.
5. Stir in the bell pepper, black beans, corn, cumin, salt, and pepper. Cook for 5 more minutes, then combine with the rice.
