Ingredients
– 1 cup rice
– 2 cups water
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 bell pepper, chopped
– 1 can (400 ml) diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1 cup grated cheese
Method
1. Rinse the rice under cold water until the water runs clear.
2. In a pot, combine the rice and water. Bring to a boil, then cover and simmer for about 15 minutes until the water is absorbed.
3. Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic, cooking until soft.
4. Stir in the bell pepper, diced tomatoes, oregano, and salt. Cook for about 5 minutes until the peppers are soft.
5. Mix the cooked rice into the pan, stirring well. Top with grated cheese and allow it to melt before serving.
