Ingredients
– 400 g dried gigantes beans
– 500 ml water (for soaking)
– 250 ml olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 400 g crushed tomatoes (canned)
– 1 teaspoon dried oregano
– 1 teaspoon salt
– Fresh parsley, for garnish
– Pepper, to taste
Method
1. Start by soaking the dried gigantes beans in 500 ml of water overnight. This helps to soften them.
2. Drain and rinse the beans. Place them in a large pot and cover with fresh water. Cook until they are tender, usually about 1 hour.
3. In another pan, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until they’re soft and fragrant.
4. Pour in the crushed tomatoes, oregano, salt, and pepper. Stir the mixture for a couple of minutes.
5. Combine the cooked beans with the tomato mixture. Let everything simmer on low heat for about 15 minutes. Sprinkle with fresh parsley before serving.
