Ingredients
– 1 cup of rice
– 2 cups of water
– 2 tablespoons of oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 bell pepper, diced
– 1 carrot, grated
– 1 can of diced tomatoes
– 1 teaspoon of paprika
– Salt and pepper to taste
Method
1. Start by rinsing the rice under cold water until it runs clear.
2. Heat the oil in a large pot over medium heat and add the chopped onion and minced garlic. Sauté until soft.
3. Add the diced bell pepper and grated carrot to the pot. Cook for another 5 minutes, stirring occasionally.
4. Stir in the rinsed rice, diced tomatoes, paprika, salt, and pepper. Pour the water over the mixture.
5. Bring everything to a boil. Once boiling, reduce the heat to low and cover. Cook for about 20 minutes or until the rice is tender and the water is absorbed.
