Ingredients

– 1 cup of rice

– 1 onion, diced
– 2 cloves of garlic, minced
– 1 carrot, diced
– 1 bell pepper, diced
– 1 can of diced tomatoes (400 ml)
– 1 teaspoon of dried oregano
– Salt and pepper to taste

Method

1. Begin by rinsing the rice under cold water until the water runs clear.
2. In a medium pot, heat olive oil over medium heat. Add the diced onion and minced garlic. Cook until they are soft and translucent.
3. Stir in the carrot and bell pepper. Cook for about 5 minutes until they soften.
4. Add the rinsed rice to the pot and stir for a minute. Then pour in the water and diced tomatoes. Add oregano, salt, and pepper.
5. Bring the mixture to a boil. Cover and reduce the heat to low. Simmer for 20 minutes or until the rice is cooked and water is absorbed.
