Ingredients
– 1 cup dried giant beans
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 can (400g) chopped tomatoes
– 1 teaspoon sugar
– 1 tablespoon tomato paste
– 1 teaspoon dried oregano
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Method
1. Soak the dried beans in water overnight. Rinse and drain the beans.
2. Cook the beans in a large pot of boiling water for about 1 hour until soft. Drain and set aside.
3. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.
4. Stir in chopped tomatoes, sugar, tomato paste, oregano, salt, and pepper. Simmer for about 10 minutes.
5. Mix in the cooked beans, and cook for an additional 10 minutes. Serve, garnished with parsley.
