Ingredients

– 1 cup of uncooked pasta
– 2 cups of water
– 1 tablespoon of olive oil
– 1 teaspoon of salt
– 1 cup of diced vegetables (like bell peppers and carrots)
– 1 can (400g) of diced tomatoes
– 1 teaspoon of Italian herbs
– 1 cup of grated cheese
– Black pepper to taste
– Fresh basil leaves for garnish

Method

1. Boil water in a pot. Add salt and the uncooked pasta. Cook according to package instructions until al dente.
2. While the pasta is cooking, heat olive oil in a pan over medium heat. Add diced vegetables and sauté until tender.
3. Pour the canned tomatoes into the pan with the vegetables. Stir in the Italian herbs and let the mixture simmer for about 5 minutes.
4. Once the pasta is cooked, drain it and add it to the pan. Mix everything together.
5. Serve the pasta warm. Top with grated cheese, black pepper, and garnish with fresh basil leaves.
