Ingredients

– 1 cup yellow lentils (toor dal)
– 1.5 cups water
– 1 medium onion, chopped
– 1 medium tomato, chopped
– 1 tablespoon sambar powder

– 1 teaspoon turmeric powder
– 2 cups mixed vegetables (carrot, green beans, potato)
– Salt to taste
– Fresh coriander leaves for garnish

Method

1. Rinse the yellow lentils under cold water until it runs clear. Add the lentils and water to a pot and cook for about 20 minutes, or until soft.
2. While the lentils are cooking, heat a little oil in another pan. Add mustard seeds and let them pop.
3. Next, add chopped onions to the pan and sauté until they turn golden brown. Afterwards, mix in the chopped tomatoes.
4. Stir in sambar powder, turmeric, and salt. Then, add the mixed vegetables and cook for about 10 minutes or until the veggies are tender.
