Dill Pickle Soup Recipe: A Creamy & Tangy Comfort Food

Ingredients

– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 2 cups diced potatoes
– 4 cups chicken or vegetable broth
– 1 jar (about 500 ml) dill pickles, chopped
– 1 teaspoon dill weed
– 1 cup sour cream
– Salt to taste
– Pepper to taste

Method

1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and minced garlic to the pot. Cook until the onion is soft.
3. Stir in the diced potatoes and broth. Bring to a boil and let it simmer for about 15 minutes, until the potatoes are tender.
4. Add the chopped dill pickles and dill weed. Cook for another 5 minutes.
5. Remove the pot from heat. Stir in the sour cream, then season with salt and pepper to taste.
