Devonshire Cream Teas: A Royal Tradition Amidst Monarchy Fatigue

Ingredients

– 500 ml heavy cream
– 2 tablespoons sugar
– 1 teaspoon vanilla extract
– 2 cups self-raising flour
– 1 teaspoon salt
– 100 g butter, softened
– 3/4 cup milk
– 1 jar strawberry jam
– 1 small jar clotted cream
– Fresh strawberries for garnish

Method

1. Begin by whipping the heavy cream in a bowl. Add sugar and vanilla extract. Beat until soft peaks form.
2. Next, combine self-raising flour and salt in a separate bowl. Cut in softened butter until the mixture resembles breadcrumbs.
3. Gradually pour in milk while stirring until a soft dough forms. Gently knead the dough for a minute on a floured surface.
4. Roll out the dough to about 2.5 cm thick, then cut out scones using a round cutter. Place on a baking tray lined with paper.
5. Bake scones at 200°C for around 15 minutes until golden brown. Once cool, serve with strawberry jam, clotted cream, and fresh strawberries.
