Roasted Beets Recipe

Ingredients
4 medium beets
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons balsamic vinegar
1 tablespoon fresh herbs (like thyme or rosemary)
1 tablespoon honey
1 cup crumbled feta cheese (optional)
1 handful mixed greens (optional)
2 tablespoons chopped nuts (like walnuts or pecans)

Method
1. Preheat the oven to 200°C (400°F). Wash the beets thoroughly and trim off the tops.
2. Wrap each beet in aluminum foil, then place them on a baking tray. Drizzle olive oil over them, and sprinkle with salt and pepper.
3. Bake for about 45-60 minutes until they are tender. To check, insert a fork or knife. Once done, allow to cool for a few minutes.
4. Unwrap the beets carefully and peel the skin off using your hands. Cut them into bite-sized pieces and place in a bowl.
5. Toss the beets with balsamic vinegar, herbs, honey, and nuts. Serve over mixed greens and sprinkle with feta if desired.
