Ingredients
– 1 tbsp olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 potato, peeled and diced
– 4 cups vegetable broth
– 5 cups fresh spinach
– 1/2 cup cream
– Salt, to taste
– Pepper, to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add chopped onion and sauté until soft.
3. Stir in the minced garlic and diced potato, cooking for a few more minutes.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes.
5. Add the fresh spinach and cream. Blend until smooth and season with salt and pepper to taste.
