Ingredients
- 3 ripe bananas
- 1/4 cup melted coconut oil
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plain flour
- 1/2 teaspoon cinnamon (optional)
- 1/4 cup chopped nuts (optional)
Method
- Preheat the oven to 175 degrees Celsius.
- In a large bowl, mash the ripe bananas until smooth.
- Add melted coconut oil, sugar, egg, and vanilla extract to the bananas. Stir everything until well combined.
- Sprinkle baking soda and salt into the mixture. Then mix in the flour and, if desired, the cinnamon and nuts. Mix until just combined.
- Pour the batter into a greased loaf pan. Bake for about 60 to 65 minutes or until a toothpick comes out clean.
