Ingredients
– 250 ml strong coffee, cooled
– 2 tablespoons coffee liqueur
– 200 g savoiardi (ladyfinger biscuits)
– 250 g mascarpone cheese
– 2 eggs, separated
– 100 g sugar
– 1 teaspoon vanilla extract
– Cocoa powder for dusting
– Dark chocolate, grated
Method
1. Begin by making coffee and letting it cool. Mix the cooled coffee with the coffee liqueur in a shallow dish.
2. In a separate bowl, beat the egg yolks and sugar together until the mixture becomes thick and creamy. Add mascarpone cheese and vanilla extract, then mix until smooth.
3. In another bowl, whisk the egg whites until stiff peaks form. Fold the egg whites gently into the mascarpone mixture.
4. Dip each ladyfinger briefly into the coffee mixture, ensuring they don’t get too soggy. Arrange half of the dipped ladyfingers in a single layer in a serving dish.
5. Spread half the mascarpone mixture over the ladyfingers. Repeat this layering with the remaining ladyfingers and mascarpone. Finally, dust cocoa powder on top and sprinkle with grated chocolate.
