Ingredients
– 4 medium sweet potatoes
– 2 tbsp olive oil
– 1 tsp salt
– 1 tsp black pepper
– 1 tsp garlic powder
– 1 tsp paprika
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 tbsp brown sugar
– Optional: fresh herbs for garnish
Method
1. Preheat the oven to 220°C (425°F).
2. Peel the sweet potatoes and cut them into bite-sized cubes.
3. In a large bowl, mix the sweet potatoes with olive oil, salt, pepper, garlic powder, paprika, thyme, rosemary, and brown sugar until well coated.
4. Spread the sweet potato cubes evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for about 25-30 minutes, turning halfway, until they are crispy and golden brown.
