Ingredients
– 450 g Italian sausage, sliced
– 1 onion, diced
– 2 garlic cloves, minced
– 1 litre chicken broth
– 2 medium potatoes, diced
– 250 ml heavy cream
– 2 cups kale, chopped
– Salt and pepper to taste
– Olive oil for cooking
– Optional: red pepper flakes
Method
1. Heat a splash of olive oil in a large pot or Instant Pot on sauté mode. Add the sliced sausage and cook until browned.
2. Add the diced onion and minced garlic to the pot. Stir until the onion is soft.
3. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then simmer for 15 minutes.
4. Stir in the heavy cream and chopped kale. Cook for another 5 minutes until the kale is tender.
5. Season with salt, pepper, and red pepper flakes if desired. Serve hot and enjoy.
