Ingredients
– 800 g zucchini, chopped
– 1 medium onion, diced
– 2 garlic cloves, minced
– 4 cups vegetable broth
– 1 tablespoon olive oil
– Salt, to taste
– Pepper, to taste
– 1/2 cup cream or milk
– Fresh herbs, for garnish
Method
1. Heat olive oil in a large pot over medium heat.
2. Add diced onions and cook until softened, about 5 minutes.
3. Stir in minced garlic and chopped zucchini, then cook for another 5 minutes.
4. Pour in the vegetable broth and season with salt and pepper. Simmer for 15 minutes.
5. Blend the soup until it is smooth. Stir in cream or milk and garnish with herbs before serving.
