Zucchini Soup Recipe
Ingredients
3 medium zucchinis, chopped
1 medium onion, diced
2 cloves garlic, minced
750 ml vegetable broth
250 ml water
1 teaspoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried thyme
1/2 cup cream
Method
1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until it becomes translucent.
2. Stir in the minced garlic and cook for 1 minute until fragrant.
3. Add the chopped zucchinis, salt, pepper, and thyme to the pot. Stir well and cook for about 5 minutes.
4. Pour in the vegetable broth and water. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
5. Use an immersion blender to puree the soup until itās smooth. Stir in the cream before serving.
