Ingredients
– 3 medium zucchini, chopped
– 1 onion, diced
– 2 cloves garlic, minced
– 500 ml vegetable broth
– 1 cup milk
– 2 tablespoons olive oil
– Salt, to taste
– Pepper, to taste
– Fresh parsley, for garnish
– Lemon juice, to taste
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, cooking until soft and fragrant, about 5 minutes.
3. Stir in the chopped zucchini and season with salt and pepper. Cook for another 5 minutes.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes until zucchini is tender.
5. Blend the soup until smooth, then stir in the milk and lemon juice. Adjust seasoning if needed and garnish with parsley.
