Delicious Winter Penne Pasta Recipe For Cozy Nights

Ingredients
400 g penne pasta
2 tablespoons olive oil
1 onion, chopped
2 garlic cloves, minced
1 zucchini, diced
1 red bell pepper, chopped
300 g kale, chopped
1 can (400 g) diced tomatoes
1 teaspoon dried oregano
Salt and pepper to taste

Method
1. Cook the penne pasta according to the instructions on the package. Drain and set aside.
2. While pasta cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Stir in the minced garlic, zucchini, and red bell pepper. Cook for about 5 minutes until the vegetables are tender.
4. Add the chopped kale and canned tomatoes to the skillet. Season with oregano, salt, and pepper. Let it simmer for 10 minutes.
5. Mix the cooked pasta into the vegetable mixture. Toss well to combine, and serve.
