Ingredients
– 250 g butter, softened
– 1 cup sugar
– 1 tsp vanilla extract
– 2 cups all-purpose flour
– 1/2 cup almond meal
– 1/2 tsp salt
– 1 large egg
– Red and green icing
– Sprinkles
Method
1. Preheat the oven to 180°C (350°F). Line a baking tray with baking paper.
2. Beat the softened butter, sugar, and vanilla extract together in a bowl until the mixture is creamy.
3. Mix the flour, almond meal, and salt in another bowl. Gradually add this dry mixture to the butter mixture and stir until fully combined.
4. Add the egg and stir until the dough forms a ball. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
5. Roll out the chilled dough on a floured surface to about 5 mm thick. Use cookie cutters to make shapes, then place them on the baking tray. Bake for 10 to 12 minutes. Once cooled, decorate the cookies with icing and sprinkles.
