Method
1. Begin by mixing the water, honey, and yeast in a bowl. Let the mixture sit for about 5 minutes until it becomes frothy.
2. Combine the whole wheat flour, salt, sunflower seeds, pumpkin seeds, and chia seeds in another large bowl.
3. Pour the frothy yeast mixture into the dry ingredients. Add olive oil and stir until a dough starts to form.
4. Knead the dough for about 10 minutes until it becomes smooth. Place it in a greased bowl and cover with a cloth. Let it rise for 1 hour.
5. After the dough has doubled in size, shape it into a loaf. Place it in a greased loaf pan. Allow it to rise for another 30 minutes, then bake in a preheated oven at 180°C for 30-35 minutes.
