Ingredients
- 1 whole chicken (about 1.5 kg)
- 1 tablespoon olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 lemon, cut into wedges
- 4 sprigs fresh thyme (optional)
- 1 onion, quartered
- 2 cups vegetable stock
Method
- Preheat your oven to 200°C.
- Pat the chicken dry with paper towels. Rub olive oil all over the chicken.
- Mix salt, pepper, garlic powder, and rosemary together. Sprinkle this mixture evenly over the chicken.
- Stuff the chicken cavity with lemon wedges, onion, and thyme if using.
- Place the chicken in a roasting pan. Pour vegetable stock around it and roast for about 1 hour 15 minutes, or until cooked through.
