Ingredients
– 1 whole cauliflower
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 1 teaspoon garlic powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 250 ml plain yogurt
– 1 tablespoon lemon juice
– Fresh herbs for garnish
Method
1. Preheat the oven to 220°C (425°F). Line a baking tray with baking paper.
2. Remove the leaves from the cauliflower but keep the whole head. Place it on the tray.
3. Combine olive oil, cumin, smoked paprika, garlic powder, salt, and black pepper in a small bowl. Rub this mixture all over the cauliflower.
4. Roast the cauliflower in the oven for about 40 minutes, or until it is golden and tender.
5. While the cauliflower cooks, mix yogurt and lemon juice in another bowl. Serve the cauliflower with the yogurt sauce on the side and sprinkle with fresh herbs.
