Ingredients
– 500 g chicken breast, diced
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 red bell pepper, diced
– 400 g diced tomatoes (canned)
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– 300 ml chicken broth
– 1 cup cooked rice
Method
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and garlic to the pan; sauté for about 2 minutes until softened.
3. Stir in diced chicken and cook until it turns golden brown.
4. Mix in red bell pepper, diced tomatoes, oregano, paprika, and chicken broth. Bring to a boil and then simmer for 15 minutes.
5. Serve the chicken mixture over the cooked rice.
