Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 500 g minced beef
– 1 teaspoon dried oregano
– 400 g canned diced tomatoes
– 1 cup vegetable broth
– 2 cups cooked rice
– 1 cup frozen peas
– 1 cup shredded cheese
Method
1. Heat olive oil in a large pan over medium heat.
2. Add onion and garlic. Cook for about 3 minutes until soft.
3. Stir in minced beef and oregano. Cook until the meat is browned, around 5 minutes.
4. Mix in diced tomatoes and vegetable broth. Bring to a simmer and cook for 10 minutes.
5. Add cooked rice and frozen peas. Stir everything together and sprinkle cheese on top. Cook until heated through and cheese melts, about 5 minutes.
